I came up with this recipe as a protein-packed recipe for my twins when they were still babies and four years later it has never fallen out of favour. It’s always important to me that I can make a big batch of things and they freeze well and these burgers fit the bill. This is a recipe that is also enjoyed by all the family.

Ingredients (Serves 6)

  • 100g cashew nuts roasted in the oven for 5-8 minutes
  • Olive Oil – 1tbsp
  • Red Onion – 1
  • Grated Carrot –  1
  • Leak  – ½ small
  • Mushrooms -125g
  • Garlic – 1 crushed clove
  • Dried thyme – 1tsp
  • Brown rice
  • Tamari -1 tbsp
  • Breadcrumbs ( 2 slices of bread)
  • Honey – 1tbsp
  • Chia Egg – 1tbsp seeds soaked in 3 tbsp water
  • Ground flax seed – 1tbsp

Directions

  1. Saute the Onion, carrot, leek, mushrooms, garlic and thyme for 10 minutes
  2. Blend the roasted cashew nuts and then put them in the pan to mix with the other ingredients
  3. Form the mixture into small burger patties and refrigerate for an hour
  4. Bake in the oven for 8 minutes each side on 180 degrees C
