This regularly features in the children’s lunch boxes, and they are delicious. If you use white flour instead of spelt four they come out a much greener colour which seems very appealing to 4-year-olds, however, I use spelt flour to make it a little healthier.

Total time: 25 minutes

Serves: 12

Ingredients:

  • 2 tbsp of ground flax with 6 tbsp of water
  • 2 cups of spelt flour
  • ½ cup coconut sugar
  • 1 ½ tsp baking powder
  • 1 tsp of baking soda
  • 2 packed cups of spinach
  • ½ cup of plant milk ( I use oat)
  • 3 tsp vanilla extract
  • 3 tbsp coconut oil

Directions:

  • Pre heat ober to 350 degrees F
  • Mix all the dry ingredients
  • Blend wet ingredients with spinach in nutribullet or blender
  • Add the wet ingredients to dry ingredients
  • Spoon into muffin holders
  • Cook for 15 minutes
