This regularly features in the children’s lunch boxes, and they are delicious. If you use white flour instead of spelt four they come out a much greener colour which seems very appealing to 4-year-olds, however, I use spelt flour to make it a little healthier.

Serves: 12
Ingredients:
- 2 tbsp of ground flax with 6 tbsp of water
- 2 cups of spelt flour
- ½ cup coconut sugar
- 1 ½ tsp baking powder
- 1 tsp of baking soda
- 2 packed cups of spinach
- ½ cup of plant milk ( I use oat)
- 3 tsp vanilla extract
- 3 tbsp coconut oil
Directions:
- Pre heat ober to 350 degrees F
- Mix all the dry ingredients
- Blend wet ingredients with spinach in nutribullet or blender
- Add the wet ingredients to dry ingredients
- Spoon into muffin holders
- Cook for 15 minutes
