I love peas they have always been a hit in our house for little fingers and they are such an easy ingredient to work with and to add to many recipes. In this recipe Peas are the star of the show, these little powerhouses of nutrition give this dish a lovely colour and texture.
This recipe is high in Protein due to the mighty pea and also has lots of vitamin K which helps the bones absorb calcium.
When I make a batch of soup I often make extra so it can be used for lunch the next day. I just keep it in the fridge and then it is a super quick go to meal.
Total time: 25 minutes
Serves: 6
Ingredients:
- 1kg frozen peas
- 1tbs olive oil
- 1 large finely chopped onion
- 3 cloves of garlic
- 1 bunch of freshly chopped mint
- 750ml veg stock
- 100g chopped potatoes
- 2 sticks of celery
- Pinch of ground black pepper
Directions:
- Saute onions & garlic for 10 minutes
- Add ¾ of the mint + ¾ of the peas, potatoes and stock
- Cook for 5-7 minutes
- When potatoes are soft puree the mixture with a hand blender
- Add the rest of the peas and the celery
- Serve with a pinch of the fresh mint
