Salad with grated carrot, apple and raisins served with water on white wood background

I struggle not to eat the whole bowl of this as soon as it’s made. It is quick and easy and the perfect as a side dish or a lunch on its own. I like to take this along to BBQ’s. I have got to admit that I haven’t tried this one on the kids yet but there is nothing in it that kids wouldn’t like so I would be surprised if they didn’t like it. I’ll update this recipe one the kids have critiqued it.

Total time: 5 minutes

Serves: 4

Ingredients:

  • 4 cups grated carrot
  • 1 finely chopped red onion
  • 4 tbsp vegan mayonnaise
  • 2 tbsp lemon juice
  • 1 tbsp Maple syrup
  • 1 tbsp curry powder
  • 1/4 cup raisins

Directions:

  • Mix together the red onion, mayonnaise, maple syrup, curry powder and lemon juice
  • Add the grated carrot and raisins and mix together to coat.
